Wow! It really was. I love food but this big breakfast will be a memory. Chipotle sauce from scratch, a great guacamole and the fresh ingredients cut to order, fillets of trout and salmon cooked just for us was a real pleasure. Hope he makes it through the final testing tomorrow and we can get them on a specials menu to see how well they sell before finally getting them on to our everyday menu.
Blended together protein powder, 1 cup unsweetened almond milk, 1/4 oatmeal, 1/3 banana, and 1 tablespoon of peanut butter into a protein smoothie.
So it was 10:30am and my stomach was telling me you have held out long enough its time to forage for food. No bread, no milk so I was leaning towards either running to the store (stopping at McDonalds on the way crossed my mind), or eggs and cheese - so probably scrambled or an omelette. Then for some reason I grabbed the granola bag even knowing there was no milk and happened to notice a highlighted box on the back of the packaging that said "Try it hot" add equal amounts of granola with water or milk and microwave for... I usually like my granola crunchy with milk make small batches at a time so it does not get soggy, but considering I have water thought I would give it a try. I can't believe how good this was! I guess its not surprising given the major ingredients are oats and brown sugar. It might had been a little bit better if I could have splashed a little milk over it like I used to when I had poridge as a kid.
I do a smoothie pretty much every morning for breakfast, this morning was no different. 1 cup coconut water, 1 cup plain Greek yogurt, 1 tablespoon dark cocoa powder, 1 tablespoon natural peanut butter, 1 teaspoon vanilla, 1 scoop plant based chocolate fudge protein powder, 1 frozen banana, 2 frozen dates. SO yummy!
Plain Greek yogurt topped sliced strawberry and 1/4 banana. One piece of whole wheat toast topped with PB2
Today I've had pumpkin soup and a salad made of spinach, tomatoes and yellow pepper. My body was screaming for iron. It still is.
